With only 1007 numbered bottles, ASSEMBLAGE Whisky unveils Collection N°2.01. This French Single Malt has the same aromatic profile as its predecessor, Collection N°2, but we have selected new barrels: an ex-Semillon cask from Château Doisy-Daëne (Sauternes) and an ex-Sauvignon cask from Le Clos Floridène (Graves).
History
ASSEMBLAGE whisky is the result of the collaboration between Aymeric, oenologist and father of the French whiskies A. Roborel de Climens whiskies, and Cedrik, founder of the Maison Mounicq, which specialises in the production of spirits made from grapes : Nadé Vodka and Avem Gins.
The two Bordelais have combined their know-how to create a whisky that reflects their shared passion for the vine.
Aymeric selected the best eaux-de-vie from the Distillerie Artisanale Hepp, then refined them in wine barrels from Bordeaux Châteaux.
Cedrik, having selected two of them, was inspired, once again, by his winegrowing roots in order to blend them perfectly as one would blend a wine.
Aromatic profile
Collection N°2.01 is produced exclusively by the Hepp Distillery, and is therefore a single malt distilled exclusively from the fermentation of malted barley.
The 3 years ageing in French Limousin oak casks gives the whisky depth and a more woody side.
The maturation in 2 old Bordeaux wine casks allows ASSEMBLAGE Collection N°2.01 to reveal the subtle flavours of the different grape varieties :
The Sémillon barrel from Château Doisy-Daëne (Sauternes) gives it floral nuances of acacia to which are added bitter and astringent flavours. As for the Clos Floridène (Graves) Sauvignon cask, it brings a nice citrus nose followed by exotic notes with ginger and mango aromas, accompanied by floral and honeysuckle flavours. The combination of these two aromatic profiles brings a real complexity to our new creation.
